Vegan Jackfruit Bread Recipe

3. Vegan Jackfruit Bread Recipe

The moist loaf cake made from jackfruit has a deliciously tropical flavour. It's a delicious variation on the well-known banana bread that uses sweet, juicy yellow jackfruit. It is also entirely vegan.

Prep time: 20 minutes | Cook time: 60 minutes | Servings: 12

Ingredients

  • Ripe Jackfruit: 350 g
  • Water: 140 mL
  • Coconut Milk: 220 mL
  • Vegetable Oil: 60 mL
  • Lemon Juice: 1 tablespoon
  • All-Purpose Flour: 250 g
  • Baking Powder: 3 teaspoons
  • Baking Soda: ½ teaspoon
  • Coconut sugar: 80 g

Method

  1. You must first soften and mash the jackfruit before making this jackfruit bread. But in essence, you need to cook chopped jackfruit in the provided water until it becomes soft, then blend it till it becomes smooth and resembles jam.
  2. You'll have a rich, creamy jackfruit puree that you can use in banana bread instead of mashed bananas.
  3. Before using the jackfruit mash in this loaf cake, let it cool to room temperature.
  4. Coconut milk, vegetable oil, lemon juice, and the prepared jackfruit puree should all be combined in a bowl and whisked together until homogeneous and smooth. Add the sugar, baking soda, powder, and flour to another. Mix thoroughly to distribute the baking powder evenly.
  5. Then, mix the dry ingredients into the wet components to blend them. The batter for the yellow cake should now be creamy and smooth but still pourable. A loaf pan measuring 21 cm x 11 cm (8 cm x 4 inches) should be lightly greased and placed in the oven to pre-heat to 180 C (356 F). After adding it to the prepared pan, level the jackfruit cake batter with a spatula.
  6. Use the below tip to help the bread rise evenly before baking the cake.
  7. A pinch of starch and a little oil should be combined in a cup to create a thick slurry.
  8. To make a slit in the batter, dip the tip of a knife in it and then run it lengthwise down the center of the loaf cake while it is buttered. For 40 to 50 minutes, bake the jackfruit bread on the middle rack.
  9. When a skewer in the center of the loaf cake emerges clean, and without crumbs, it is done baking. Fruit bread should be taken out of the oven, let to cool for five to ten minutes, and then placed on a rack.
  10. Before serving, let it cool down.

Vegan Banana Bread Recipe

4. Vegan Banana Bread Recipe

Delicious and very moist vegan banana bread! Very simple, adaptable, and allergen-friendly – can be nut- and gluten-free… or not!

Prep time: 20 minutes | Cook time: 60 minutes | Servings: 12

Ingredients

  • Mashed banana: 1½ cups
  • Salt: ½ teaspoon
  • Vanilla extract: 1 teaspoon
  • Cinnamon: ¾ teaspoon
  • Tahini, raw almond butter, or full-fat coconut milk: ¼ cup
  • Apple cider vinegar: 1 tablespoon
  • Wheat or oat flour: 2 cups
  • Baking soda: 1 teaspoon
  • Baking powder: 2 teaspoons
  • Date sugar: ¼ cup

Method

  1. Set a loaf pan with parchment paper inside an oven to 350 degrees. With a fork, mash the bananas to eliminate any large lumps. You can use up to roughly half a cup of applesauce instead of the mashed bananas if you don't have enough. Prepare the extra banana now so it will be ready when you need it if you choose to use it to decorate the top of the bread.
  2. Slice it lengthwise into four equal pieces, using the inner two (flattest) pieces for decorating. It can be cut into two lengthwise slices, but it will take longer for those thicker pieces to bake thoroughly, and the batter underneath them might not be as done.
  3. Depending on what you're using, combine vanilla, cinnamon, salt, apple cider vinegar, and raw almond butter (or tahini or coconut milk). Stir in additional mix-ins (such as raisins, walnuts, etc.).
  4. Add the flour, date sugar, baking soda, and baking powder to the wet mixture. Then combine the batter as a whole after stirring the dry ingredients as forcefully as possible. Avoid overmixing! Mix the ingredients barely, just until they are incorporated. This keeps the final baked texture soft rather than chewy.
  5. When the batter is barely incorporated, transfer it to your loaf pan immediately. Gently press the batter into the pan's corners. Even out the top (using wet fingers can help with this). After mixing the batter, the sooner you complete this step, the better.
  6. Because the batter begins to expand as soon as it is mixed, you want to press it into the pan before it has much of an opportunity to rise, allowing the rising to proceed freely without the possibility of deflation when pressing it into the pan.
  7. If you want to decorate with banana slices, arrange them face-up on top of the loaf and gently push them into the batter. As an alternative, add handful of walnuts to the top and lightly press them in. Or try both!
  8. It will be ready when the top is golden brown, the middle is firm when you tap it, and there is very little spring. Bake for around 50 minutes. It may take an hour or two to cool nearly fully before cutting into it. After that, slice and enjoy!

  • White sugar: 1 cup
  • Salt: 1 teaspoon
  • Baking powder: 3 teaspoons
  • Baking soda: ½ teaspoon

  1. Set the oven to 350°F (180°C). Milk is combined with balsamic vinegar; set aside. In a microwave-safe bowl, weigh the frozen strawberries and zap on high for 6 minutes. To the bowl of your food processor or blender, depending on what you're using, add the vanilla essence and banana, peeled and cut into three to four chunks.

  4. Pour the mixture into a loaf pan that has been lightly greased (you may use a little canola oil, sunflower oil, or vegan oil for this purpose). Place the prepared pan on the shelf beneath the center shelf of the oven.
  5. After baking for forty minutes, remove from the oven, loosely cover with tin foil to keep the crust from burning, and bake for a further twenty minutes.
  6. After removing from the oven, let the food cool completely in the pan before removing. When you turn the pan upside down and carefully loosen the sides with a knife, it ought should quickly come out.

Vegan Challah With Fruit and Nuts Recipe

7. Vegan Challah With Fruit and Nuts Recipe

A soft, plaited vegan challah bread with crunchy walnuts and tangy dried cranberries. This fluffy loaf may be made without eggs!

Prep time: 30 minutes | Cook time: 35 minutes | Servings: 10

Ingredients For The Basic Challah Recipe

  • Bread flour: 2 cups
  • All-purpose flour: 2 cups
  • Instant dried yeast:  4 tablespoons
  • Sugar: 4 tablespoons
  • Salt: 1 teaspoon
  • Orange juice or almond milk, lukewarm: ¾ cup
  • Thick vegan yogurt: ¾ cup
  • Olive oil: 2 tablespoons
  • Apricot jam, pressed through a sieve: 2 tablespoons

Ingredients For Easter Add-Ons

  • Apricots: 75 g
  • Sultanas: 75 g
  • Almonds, chopped

Method

  1. Mix the yeast, sugar, and salt with the sifted flours in a sizable mixing bowl. If your yeast has to be activated, proceed to the next step and add the activated yeast.
  2. Mix everything with a large wooden spoon until it is coarsely blended after adding the warm orange juice, vegan yogurt, and olive oil.
  3. To keep the bread delicate, only lightly knead it for 5 minutes on a surface dusted with flour. The dough will be somewhat liquid; if it becomes too difficult to work with, add a little more flour, but don't go crazy. Create a dough ball and set it in a clean and towel-covered dish.
  4. Until the dough has doubled in size, set the bowl in a warm (but not too warm – avoid placing it too close to an open flame or a hot heater). To rehydrate sultanas and apricots in the interim, submerge them in a little hot water for five minutes.
  5. Using a sieve or muslin cloth, drain and squeeze the extra moisture from them. The apricots should be finely diced. Combine the apricots, sultanas, and almonds. Use kitchen scales to divide the dough into three, four, five, or six portions. Using a rolling pin, shape each component into a lengthy rectangle. Sprinkle some fruit and nuts over the rectangle and use both hands to roll it up tightly while exerting even pressure.
  6. Leave some room between each of the three strands as you arrange them side by side on a baking sheet that has been gently greased.
  7. Pinch the three strands' ends together at one end before beginning to braid by folding the right strand over the center strand, followed by the left strand. Continue until you reach the opposite end. Pinch the ends one more. Gently tuck in the bread's two pinched ends.
  8. When the bread is thoroughly proofed, it should not spring back entirely when you probe it with your fingers but instead maintain a slight indentation. Cover the bread and let it rest for an additional 60 minutes.
  9. While the bread is resting, preheat the oven to 190°C (375°F. Bake for 35 to 40 minutes or until the top is well browned.
  10. Glaze while still hot with apricot jam and two tablespoons of water.
