  • Spelt flour or all-purpose: 2 cups
  • Baking powder: 2 teaspoons
  • Cinnamon: 2 teaspoons
  • Coconut sugar or other sugar/syrup: 2 teaspoons
  • Orange juice or other fruit juice: ¼ cup
  • Water: ¾ cup
  • Vegetable oil: ¼ cup
  • Pepitas & sunflower seeds mixed: 1 cup
  • Pinch of salt

Method

  1. Turn the oven on to 350°F. A 25-cm (9×5-inch) loaf pan should be greased and lined with parchment paper, leaving an overhang on both sides. Chop the nuts and dried fruits roughly. Place aside. Mix the flour, baking powder, salt, cinnamon, and coconut sugar in a big bowl.

  • Coconut Milk: 220 mL
  • Vegetable Oil: 60 mL
  • Lemon Juice: 1 tablespoon

  • Baking Powder: 3 teaspoons
  • Baking Soda: ½ teaspoon
  • Coconut sugar: 80 g

Method

  1. You must first soften and mash the jackfruit before making this jackfruit bread. But in essence, you need to cook chopped jackfruit in the provided water until it becomes soft, then blend it till it becomes smooth and resembles jam.
  2. You'll have a rich, creamy jackfruit puree that you can use in banana bread instead of mashed bananas.
