Method

  • Mashed bananas: ⅓ cup

  3. Microwave for approximately 80 seconds. It's fine if it's a little undercooked; it'll finish cooking as it cools. It's preferable to have it slightly undercooked rather than overcooked. Remove from the oven and set aside to cool for 3 minutes.

  5. Microwave for 1 minute and 10 seconds. Then, double-check to see if everything is finished. You may have to cook the mug cake for an additional 10 seconds at a time until it looks done. Allow your cupcake to rest for around 2-3 minutes after that.

Strawberry Vegan Mug Cake

Ingredients

  • Strawberry: 1 large
  • Coconut cream: 3 tablespoons

  2. Microwave for 65-75 seconds, putting the mug on a small plate (in case of spillage). Check to see if the cake is finished. (Depending on how strong your microwave is, you may need to microwave for less time or for an additional 5-10 seconds.)

Ingredients

  • Mashed avocado: 2 tablespoons
  • All-purpose flour: 4 tablespoons
  • Granulated white sugar: 3 tablespoons

  • Vegan milk: 2½ tablespoons

Method

  2. With a tiny whisk, combine all of the ingredients until a smooth batter develops. Make sure any avocado chunks are crushed. Cook for 1 minute and 20 seconds in the microwave.
  3. Your time may differ significantly. On a 1000 watt microwave, mine took exactly 1 minute 20 seconds. Allow a few minutes for the cake to cool before serving. The cake is best eaten within a few hours of its preparation.

Prep Time: 2 Minutes | Cook Time: 3 Minutes | Servings: 1

Ingredients

  • Flour: 3 tablespoons
  • Brown sugar: 3 tablespoons
  • Unsweetened cocoa powder: 3 tablespoons
  • Baking powder: ¼ teaspoon
  • Salt: 1 pinch
  • Guinness: 3 tablespoons
  • Aquafaba: 3 tablespoons

Method

  6. I baked mine in the microwave for 2½ minutes at half power in the center and it came out perfectly. After 2 minutes, lightly press in the top of the cake with your finger to verify if it is baked. It's done when it feels springy and sturdy. Even after the center has cooked, the top will remain moist, leaving you with a wonderful brownie-like coating.
