- Red pepper flakes: ¼ teaspoon
- Salt: ¾ teaspoon
- Ziti or other pasta: 1 pound
- Raw cashews: ¾ cup
- Reserved pasta water: ¾ cup
- Freshly torn basil leaves: ⅓ cup
- A very simple vegan recipe using basil. Set oven to 400 degrees Fahrenheit. Cherry tomatoes, chopped onion, minced garlic, red pepper flakes, and olive oil should be combined. - Medium red onion, diced: ¼
- Neutral oil: 1 teaspoon
- Fresh basil leaves, rolled and cut into ribbons: 8–9
- Salt to taste
- Preheat the oven to 400°F. After pressing your tofu, pat it dry before cutting it into 16 identical cubes. Put the tofu pieces in a sizable Tupperware container along with the nutritional yeast, garlic, white wine vinegar, soy sauce, and nutritional yeast. To uniformly coat the tofu, shake the Tupperware container while carefully sealing it.
- Ensure the tofu is spread out and not touching any other tofu before placing it on a lined baking sheet. Bake the baking sheet for 20 minutes or until the edges are golden, and then remove from the oven.
- Combine the remaining soy sauce, maple syrup, brown mustard, garlic, lemon juice and zest, and cornstarch in a small bowl. Stir everything together carefully with a fork to ensure no clumps.
- With a dash of salt, sauté your onion in a skillet over medium heat until tender. When the sauce has thickened, add the tofu and lemon sauce. Sauté for about a minute.

3. Vegan Thai Basil Tofu with Green Beans
Prep time: 10 minutes | Cook time: 25 minutes | Total time: 35 minutes | Servings: 2
Ingredients For The Tofu And Green Beans
- Extra-firm tofu: 14 oz
- Neutral oil: 1 tablespoon
- Green beans: 5.2 oz
Ingredients For The Stir-Fry
- Neutral oil: 1 tablespoon
- Ginger minced: 1 thin
- Garlic minced: 3 cloves
- Green chilli sliced: 1-2
- Bird's eye chiles or Thai Chiles: 2-3
- Yellow onion diced: ½ medium
- Red bell pepper diced: 1 small
- Brown sugar adjust to taste: 1-2 tablespoons
- Soy sauce or to taste: 2 tablespoons
Ingredients For The Sauce
- Dark soy sauce: 1½ teaspoons
- Packed Thai or Holy Basil leaves: ½ cup
- Salt to taste.
- Dash white pepper
- To drain extra liquid, press the tofu for at least 10 minutes. My preferred method is to cover my tofu with a towel and set a weighted object on top. After that, add the tofu to a bowl and break it up with a fork or your hands. Green beans should have the ends chopped off. Cut into ½-inch-wide slices. A giant skillet, cast iron pan, or wok should be heated to medium-high heat.
- Add the oil once it's heated. Add the green beans after turning the heat up to high. Until one side has browned, do not touch for 2 to 3 minutes. The process should take 8 minutes, during which time the beans should be somewhat browned. Beans should be taken out of the pan and put aside.
- Tofu should be cooked for about 10 minutes until it resembles minced meat and is gently browned. Tofu and the bell pepper/onion mixture should be combined. Include the leaves of Thai basil.
- Mix well, then sauté the basil leaves for 2 minutes over medium-high heat or until they have wilted. Reintroduce the green beans.

- Whole wheat pasta: 8 oz
- Broccoli florets: 3 cups
- Olive oil: 2 tablespoons
- Yellow onion, diced: 1 medium
- Red bell pepper, diced: 1 medium
- Sun-dried tomatoes sliced: 3 ounces
- Arugula (a few handfuls): 4 ounces
- Kosher salt and ground black pepper

- Roasted, unsalted cashews: 1 cup
- Garlic: 3 cloves
